Heartland Baking started operations in the fall of 2006 under the leadership of Steven Scaff and Jim Mitro. They purchased a 44,000 sq. ft. former cookie bakery in Du Quoin, IL, with the vision to produce great tasting, "fresh baked" seasonal cookies for the In-Store Supermarket Industry. Until then, most manufacturers produced seasonal cookies months in advance of the holidays, storing the cookies in outside freezers. Steven and Jim’s strategy was to produce only "fresh baked" seasonal cookies giving their customers superior flavor, taste and longer shelf life that only "made to order" cookies can deliver. Today, Heartland Baking Company is experiencing fast growth, introducing exciting new products and growing their customers profits and sales in the cookie category. We have cookies now for the convenience store, food service and mass merchandising markets. Pre-packaged clamshells, trays, individually wrapped, boxed, custom design, custom recipe and private label cookies are available, and are still "fresh baked to order!"
